Importance of food safety, knowledge of individual responsibility, personal hygiene and keeping work areas clean.

Using kitchen equipment independently and accurately
Practical skills using large and small equipment, working safely and hygienically, choosing the correct equipment and cleaning it properly after use

Spring - Personal Health and Wellbeing 

Food commodities
Where does food come from, how it is contained, safe and hygienic storage

Summer - Achieving Together 

Helping others to make healthy choices
Understand that customers need to be informed of the ingredients and how to be supported in making healthy choices, different dietary requirements and how to use food labels to help make informed choices.

Year 13

Autumn - Employability and Entrepreneurial Skills 

Introduction to the Hospitality Industry
Main types of outlet in the hospitality industry, different services offered and job opportunities within it

Spring - Managing Positive Health and Wellbeing

Customer Service in Hospitality
Communicating effectively with others, practical kitchen skills and personal presentation

Summer - Supporting and Leading others

Food Preparation and Cooking
Researching recipes, sourcing ingredients and applying prior knowledge of hygiene, taking on specific job roles within the kitchen.

Year 14
